1 box Lunchbox Peppers

1 package Cream Cheese

1 clove Garlic

2-3 TB Sour Cream

Salt to taste

Preheat oven to 375.  Place Lunchbox Peppers on baking sheet and roast for 15 to 20 minutes.  Long enough for some to blister a bit and puff up.  At about the 10 minute mark shake the baking sheet to roll the peppers around a little.  When the peppers are done take them out of the oven and let cool enough to handle.  Once cooled, cut the tops off.  Throw all the peppers into a blender or food processor along with cream cheese, garlic, salt and sour cream.  Run until all is well pureed and blended.  Adjust seasoning.  I have also made this with a bit of yogurt instead of sour cream.
