Eatwell Farmhouse Kitchen

2 cups Basmati or Jasmine Rice
1 TB Butter
1 TB Olive Oil
1 small Onion, chopped
1 bunch Dino Kale, finely chopped
1 Qt Eatwell Farm Chicken Stock
1 cup chopped Fruit, Peaches or Nectarines or Cherries, depending on what you have your share this week
1/4 tsp Coriander
1/4 tsp Cinnamon
2 tsp Salt

In the pot you will cook your rice, heat the olive oil then add the onion.  Sauté the onion just until glassy, then add the dino kale.  Cook slowly so as not to burn the onion, but long enough to cook the dino kale well until tender.  Add the butter then the rice.  Over medium heat cook the rice until it just begins to turn golden and smells really aromatic.  Add the coriander and cinnamon, stir well.  Add the stock and salt.  Cook with enough heat to bring to a boil, turn the temp down to just a simmer, and cook uncovered until the liquid is level with the top of the rice (this takes about 10 minutes).  Turn the temp down to medium low, add the chopped fruit, cover the pot and cook about another 10 minutes, until the rice is done.
