At the market this morning Nigel will be part of Henry Tenebaums weekend morning news show on KRON4. He will be showing Lorraine's Sweet Potato (and butternut) pie made with our flour, eggs, sweet potatoes and butternut squash. Here's the recipe
Sweet Potato Pie Filling
1 1/2 pounds sweet potato ( you can substitute up to half with butternut or kubocha squash)
1/2 cup butter, softened
1/4 cup white sugar
¼ cup brown sugar
2 Tablespoons Molases (or maple syrup)
1/2 cup buttermilk
3 pasture raised eggs
½ tsp salt
2 teaspoon ground nutmeg
2 teaspoon ground cinnamon
2 teaspoon vanilla extract
Bake sweet potato whole in skin until done. Remove the skin.Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust or simply bake in a baking dish. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean.
