1¼ c. (packed) chopped fresh cilantro1 c. olive oil 5 Tbsp. white wine vinegar 1 tsp. ground cumin 2 garlic cloves (or one stalk green garlic!) 1 tsp. minced, seeded Serrano chile, optional

Combine all ingredients in processor. Blend until almost smooth. Season dressing with salt and pepper. Can be made one day ahead. Cover and chill. Bring to room temperature and re-whisk before using.
