2 apples 1 egg ¼ cup flour pinch of salt and pepper ½ tsp sage
Coarsely grate two peeled apples and mix them with an egg, ¼ cup flour, a pinch of salt and pepper, and about ½ teaspoon fresh sage.
Melt a healthy nubbin of butter in a skillet and when the butter is hot and foamy, drop in heaping tablespoons of batter, making rounds about 3 inches in diameter. Fry 1 to 2 minutes, or until golden brown on the bottom, then turn and fry the other side. Serve hot as a savory side dish.
