In honor of St. Patrick’s Day, I adapted the below traditional St. Patty’s Day recipe to include items from this week’s box. I hope you enjoy it! — Molly 1 lb. greens (all of your mixed kales & collards + ½ your spinach for this week) 1 lb. sweet potatoes (½ this week’s box allotment) all of your green garlic or 2 sm. leeks ½ c. butter 1 cup milk salt and pepper, to taste 1 pinch ground mace
In lg. saucepan, simmer greens until tender; remove & chop well. Set aside & keep warm. Boil sweet potatoes until tender. Remove from heat & drain. Chop green garlic or leeks (green & white parts). Simmer in just enough milk to cover, until they are soft. Season & mash sweet potatoes well. Stir in cooked garlic/leeks & milk. Blend in greens & heat until the whole is a pale green fluff. Make a well in the center & pour in melted butter. Mix well. Makes 4 to 6 servings.
