Last Saturday at the Ferry Plaza Farmers Market in San Francisco Michael Kalanty from the California Culinary Academy showed us all his love for the craft of bread making. He teaches students every day how to make bread, just bread. He had a wonderful engaging style and the bread samples he baked were delicious. He baked bread with one third our flour and two thirds regular white bread flour. I have a  copy of his book and am avidly reading it. His book won the best bread book at the Gourmand Awards in Paris.
