Hanging out with friends recently, I realized I’d totally forgotten this recipe (once a true stand-by at my house). I think it’s one of the best turnip recipes around! So simple, too . . . A bunch of roasting turnip), greens removed & saved for another dish vegetable oil for roasting/frying good salt

Preheat oven to 375. Slice the turnip roots very thinly (if you have a mandoline in your kitchen, this is the perfect time to use it!). Pour a good amount of oil into a shallow baking dish large enough to hold the turnip slices in one layer (a baking sheet with sides works well, too). If you have more turnip slices than room in your pan, you can use multiple dishes and/or make the chips in batches. Toss turnips in oil to coat, sprinkle with salt, & toss again. Roast in oven until crispy. You may want/need to turn the turnips once or twice so they'll cook evenly. Serve with your favorite garnish sauce or eat as side to a larger dish. So good!
