A handful of arugula, washed and stems removed
1 Tbsp. mustard
3 Tbsp. balsamic vinegar
¼ c. dried cranberries
1/2 tsp. salt
½ c. crumbled goat cheese
1/2 tsp. freshly ground pepper
½ c. toasted walnuts
3/4 c. extra virgin olive oil
Toast the walnuts in a dry, heavy saucepan. Stir frequently, and take care not to burn! Put mustard, vinegar, salt, and pepper in a food processor/blender and run until smooth. With the motor running, slowly drizzle the olive oil through the feed tube until smooth (you can also whisk it all by hand). Toss the arugula with the vinaigrette—use a small amount at first and add more as needed.  Mix the walnuts and dried cranberries into the goat cheese (add salt and a little olive oil if the cheese is too crumbly to hold together). Pile the dressed greens and cheese on a slice of bread and top with another.
