Cucumber Salad

After such a busy weekend at the Ferry Plaza Farmers Market and Sauce Party, I certainly wasn’t up for making a big dinner Sunday night. I quickly put this cucumber salad together, cooked up a couple of yummy sausages and served with a few slices of great bread.
Zest from 1 Lemon
1 small Garlic clove, finely minced
1 cup plain Greek Yogurt Or drain some of your own homemade Yogurt
1 or 2 Cucumbers, peeled, halved lengthwise, seeded, and diced fine
Olive Oil
Salt and Pepper
Mix the cucumber, yogurt, and lemon zest, and season with salt and pepper to taste. Drizzle a little olive oil, mix again and taste. Adjust seasoning to suit your taste.
