Rakott Krumpli - Layered Potato Bake

2 lbs Potatoes
1 tsp Vegetable Oil
2 Csabai Sausages OR 1/2 pack of good Bacon
8 Hard Boiled Eatwell Farm Eggs
1 3/4 cups of Sour Cream
1 cup Heavy Cream
2 tsp Salt    Paprika

Preheat oven to 350 F.  Bring potatoes to the boil in a saucepan of salted water.  Reduce heat to low and cook until just tender.  Drain, cool and thickly slice.  Peel your eggs and slice them using an egg slicer if you have one.  Heat oil in a frying pan over high heat.  Add sausages and cook for 2 minutes or until light golden.  Drain on a paper towel.  Allow to cool a bit then slice to about 1/2” thickness.  OR if you are using bacon cook until just done.  Cool them chop relatively small, but not minced.  Mix the salt, sour cream and heavy cream, basically you want a pourable sour cream that is pretty salty.  Pour a small amount of the sour cream/cream mixture into a  casserole dish, then begin your layers, potatoes, egg and bacon.  Layer up until you are out of ingredients, then top with the remaining sour cream mixture.  Sprinkle with paprika and pop into the oven.  Bake for 30 to 40 minutes, until nicely browned.
