We love when our members are inspired to create new recipes using our produce and products. CSA member, Josefine, emailed us in the spring with a teaser photo of her vegan waffles using Eatwell Farm's Heirloom Sonora Wheat, and we practically begged her for the recipe. Lucky for us, she shared it!

This makes 4 vegan waffles:

1 mashed banana

2 teaspoons of vanilla extract

1 teaspoon ground cinnamon

1/4 cup coconut oil melted

2 cups Eatwell Farm Heirloom Sonora Wheat Flour

2 teaspoons baking powder

2 cups soy milk or other liquid

Start with the mashed banana, add most of the melted coconut oil. (Save the rest for the waffle iron.)

Mash together. Add vanilla and cinnamon. Now add the flour, baking powder and soy milk. The batter is thinner than regular waffle batter since the heirloom wheat wants more liquid to expand in. (Josefine skipped sugar since the bananas are sweet and the maple syrup (as a topping is sweet.) Cook in your waffle iron until you think it's done!
