It’s Monday and I feel like a slug.  As much as Nigel and I enjoy having farm events and seeing many of you here it does make for an exhausting weekend.  So I take this “slugness” as an excuse to sit on the couch surrounded by cookbooks and even watch some old episodes of Julia and Jacques – Cooking at Home.  I’m in heaven.  I do this mostly for inspiration and most weeks I am over inspired, because there just isn’t enough room in the newsletter for everything.Looking at the list of what is in this week’s share I can’t help but think, raw, crunchy, fresh salads.  Baby lettuces, radishes, arugula and spinach, green cabbage and carrots dressed with lemon juice, lemon zest, orange zest or dill and spiced up with a little green garlic or fresh yellow onions.  Nigel and I absolutely love Blue Cheese dressing, you can use it on the baby lettuces, mix in a little spinach and arugula to spice it up or try it in a slaw.  Blue Cheese Dressing and Cabbage/Carrot Slaw recipes listed below. I like to keep washed lettuce in the fridge in my salad spinner.   Sometimes I will clean a few different greens separately but then put them back into the spinner to use later so they are ready when I want them.  I have a small spinner that does not drain the water out of the bottom bowl, so I keep a little water in there and have found the greens are great and ready to use for several days. Simple Delicious Blue Cheese Dressing – Makes ¾ cup Good up to 14 Days

2 ½ oz. Blue Cheese, crumbled it is about ½ cup 3 TB Buttermilk if you don’t have Buttermilk you can use Whole Milk although the dressing will be a little lighter 3 TB Sour Cream, instead I use plain Yogurt since we now make our own and always have it on hand 2 TB Mayonnaise also homemade, very simple and much better than bought –*Recipe below 2 tsp. White Wine Vinegar or Apple Cider Vinegar can be used instead ¼ tsp. Sugar To make a creamy dressing - place all ingredients in a blender or food processor and puree.  For a crumbly dressing - mash blue cheese and buttermilk in a small bowl with a fork, stir in the remaining ingredients.  Salt and Pepper to taste
