3 or 4 zucchinis, chopped1 spring onion, diced 1 medium tomato, coarsely chopped 2 cloves of garlic, minced 1 to 2 tablespoons butter or oil 1/4 cup of water or less (keep in mind the zucchini will release water) Freshly ground black pepper A pinch of salt A handful of cheddar cheese

Place all the ingredients except for the cheese in a pot and cover with lid.  Cook over medium low heat for about 40 minutes or until zucchini is tender.  Serve hot and sprinkle with cheese.
