Wash the potatoes well. Use your mandolin to slice the potatoes thinly.
Not like I did.
Soak in water for at least 20 minutes.
Dry between layers of paper towel.
Make sure the oil is hot and do not overload the fryer like I did.
In the Farm Kitchen.
Sprinkle with a little Smoked Chile salt. Serve with a cold beer. Life is good.
