2 pounds potatoes of mixed variety, cut into 1-inch cubes or wedges3 tablespoons olive oil
4 cloves garlic, peeled
1 medium or 3 small onion, large chop (optional)
Eatwell heirloom tomato salt and freshly ground pepper

Preheat the oven to 400 degrees F.  Toss together the potatoes, garlic and oil, then sprinkle with salt and freshly ground pepper. Place the potatoes on a baking sheet and roast until tender and crisp on the edges, about 30 minutes.  Enjoy!
