Armenian Spiced Rice with Fruit and Nuts

Armenians believe that adding cinnamon to food is adding a little bit of love!

1/4 cup dried fruit (peaches or apricots) coarsely chopped

1/2 cup raisins

1/4 cup golden raisins (optional)

1/2 cup blanched slivered almonds

1/2 cup sliced scallions or spring onions (with a few green tops chopped thin)

1/2 teaspoon ground cinnamon

4 tbsp unsalted butter

3 cups chicken broth

1 1/2 cups basmati rice

salt and freshly cracked pepper

In a medium skillet melt 1 tbsp butter over medium-low heat.  Add the almonds, raisins, dried fruit, and cinnamon.  Saute 2-3 minutes and then remove from heat.  In a medium saucepan, melt 3 tbsp butter over medium heat and add scallions.  After 1 minute, add rice and saute about 2 minutes until slightly browned, then add chicken broth.Bring to a boil, season with salt and pepper, reduce heat to medium-low, then cook covered, about 20 minutes, until the rice is tender and the liquid has been absorbed.  Remove from heat, let stand 5 minutes, then stir in fruit and nut mixture and enjoy!
