2 cups snap peas2 cloves green garlic, minced 2 teaspoons canola or peanut oil Salt and pepper to taste

Prepare snap peas by cutting off tips on each pod.  Heat oil in a skillet or wok on medium-high, add snap peas, and sauté for 2–3 minutes.  Toss peas often until they are cooked but still crispy.  Add minced garlic to skillet and cook for another 15 seconds.  Serve as side dish or over rice as a stir-fry.
