So We have been invited to an oscar party this evening and I volunteered to bring eggs. Peeling hard boiled eggs, that were laid yesterday proved to be impossible. Very frustrating. The reason is that they are fresh, they need to be at least two weeks old to peel easily. We don't do old eggs here. The sad fact of eggs in the store is that they can be sold as fresh eggs up until they are 3 months old. I was asked by a Mexican American Chef to send him eggs that were no more than day old and never put in the cooler. He claimed that it was the refrigeration that caused the problem. We did it but have not heard back from him. It did not work for me today.

If you have any tricks, ideas, wisdom on the subject I am sure I am not alone with this problem.
