3 large carrots, shredded (2 cups)1/4 cup Greek-style yogurt 1/2 cup raisins 2 tablespoons of orange juice (juice from ½ half of a large orange) 1/4 teaspoon ginger 1/4 teaspoon cinnamon 1/2 tablespoon mayonnaise or vegenaise

Mix all ingredients together and refrigerate for two hours.

Note: This recipe can be easily doubled or tripled. And if it seems to dry to you, feel free to add more yogurt or mayonnaise.  Serves 4.
