This is a customary beginning to a Persian meal and it is so refreshing and delicious! 1/2lb French, Greek, or Bulgarian feta cheese

1 1/2 tbls extra virgin olive oil

1/2 small clove garlic, thinly sliced

1 bunch radishes, trimmed

1 bunch green onions (scallions), white and pale green parts only

2 dozen kalamata olives

hearts of romaine lettuce

fresh mint, basil, or dill leaves

pita bread

Put the feta in a food processor with olive oil and garlic and blend until smooth and creamy.  Transfer to a serving bowl or plate or spoon onto the middle of a large platter and surround with all the remaining ingredients.
