Heirloom Tomato Salad
Celebrate tomato season with this simple and delicious salad! 3-4 Heirloom tomatoes, small, variety of colors |
1 cloves Garlic, finely minced |
1/4 C Sweet Onion or purple onion, diced |
1/2 TBSP Fresh Parsley, chopped |
1/2 TBSP Fresh Basil, chopped (or 1 tsp dried basil) |
1 TBSP Red Wine Vinegar |
1 1/2 TBSP Extra Virgin Olive Oil |
Salt to taste ( 1/2 tsp) |
1/4 tsp Black Pepper, freshly ground Cut cores from the tomatoes; slice each tomato into wedges. Combine with remaining ingredients in a large bowl; toss to blend well. Cover and refrigerate for at least 1 hour before serving. http://www.centralmarket.com/ |
