Chilled Cucumber Soup
4 cucumbers, peeled and seeded ½ tsp. cayenne pepper1 small garlic clove 1 c. yogurt 1 small onion or 2 scallions a few sprigs of mint, if desired 2 tsp. salt
Chop cucumbers, garlic, onion or scallions. Place in a blender with salt, cayenne pepper, and yogurt. Blend until frothy and chill. Add mint, if desired, for a refreshing summer soup.
