½ lb. carrots (or this week’s share)1½ Tbsp. olive oil 1 Tbsp. fresh lemon juice 1 small clove garlic, finely minced 2 tsp. chopped fresh chives salt
Grate carrots. Transfer to a bowl and stir in olive oil, lemon juice, garlic, chives, and salt, to taste. Adjust seasoning!
