This is a new crop for our farm. I grew them many years ago when I first started farming at Congelow Produce in Kent, England. My memory is washing them in the winter and rushing so that they would not freeze to the wash table!

Native to the Eastern US this vegetable is also known as a Sunchoke. We eat the swollen tubers. It is a member of the Sunflower family. The flowers are small and not very impressive. It has a sweet nutty flavor that will make a great addition to our fall and winter boxes.
