Turnips Braised with Soy Sauce and Sugar

Chef Madhur Jaffrey recommends serving these with rice, beans, and dark greens. Try cooking the turnip greens: just remove large stems before cooking like chard. 1 bunch turnips, trimmed and halved ½ cup vegetable stock 1½ tsp sugar 1 Tbsp. peanut or canola oil 1 Tbsp. tamari soy sauce ¼ tsp roasted sesame oil

Put the oil in a large frying pan and set over medium-high heat. When hot, put in the turnips. Stir and fry until the turnips are lightly browned on all sides, about 5 minutes. Add the stock, soy sauce, and sugar. Bring to a boil. Cover, the heat down to low, and simmer gently for 15 minutes, or until the turnips are tender. Turn every now and then so the turnips color evenly. Sprinkle the sesame oil over the top and toss. These turnips may be made ahead of time and reheated. Serves 2 to 4.
