3/4 cup Eatwell Farm triticale flour3/4 cup all-purpose wheat flour 2 tsp baking powder 3/4 tsp baking soda 2 Tbsp sugar 3 pasture-raised eggs 1½ cups buttermilk 3/4 cup melted butter Milk (if needed) 3/4 tsp salt

Heat a waffle iron. Mix flours, baking powder, baking soda, sugar, and salt. Beat the eggs in a large bowl and stir in the buttermilk and butter. Stir in the flour mixture, adding a little milk if the batter seems too thick. Spoon the batter into the waffle iron. Cook until crisp and golden.
