Sweet Potato Muffins

1¾ c. sifted all-purpose flour¾ tsp. salt ½ c. sugar 2 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 2 eggs 2-4 Tbsp. melted butter ¾ c. milk 1 c. cold cooked mashed sweet potatoes 1 c. chopped pecans, optional 2 tsp. grated orange rind, optional

Heat oven to 400 degrees. Sift together dry ingredients (including pecans and orange rind, if using them). Beat eggs in a separate bowl. Add the butter, milk, and sweet potatoes to the eggs. Combine the liquid and dry ingredients with a few swift strokes. Fill well-greased muffin pans two-thirds full and bake 20 to 25 minutes.
