3/4 lb. sm. red potatoes, quartered lengthwise2 tsp. minced fresh mint leaves 2 tsp. minced fresh parsley leaves 1 Tbsp. unsalted butter, softened 1 Tbsp. sour cream
In a steamer set over boiling water, steam potatoes, covered, for 10-12 mins, or until just tender. While potatoes are steaming, in a bowl stir together mint, parsley, butter, sour cream, & salt & pepper, to taste. Add potatoes to the herb mixture & toss them well.
