Pre-heat oven to 450F. Scrub 2 large sweet potatoes, slice into batons/fries. Toss them in about 1 Tbsp. of canola oil till all are lightly coated. Lay fries on a sheet/pan (with lip) in a single layer. Cook in the oven for 10 minutes, then turn the fries over. Bake for another 20 minutes, turning fries so that all sides get crispy and fries are golden and tender. Take out of the oven, and sprinkle a little salt over them to taste.
