1 lb. baby turnips, trimmed and grated1 tsp. vegetable oil 1 sm. piece (1 inch) minced fresh ginger 1 tsp. cumin seeds 1/4 tsp. ground turmeric 1 green chile pepper, finely chopped (optional) 1/4 tsp. hot red pepper flakes, or to taste 1 tsp. sugar, or to taste 3/4 tsp. salt, or to taste 1/4 tsp. garam masala A few cilantro leaves chopped, for garnish (optional)

Heat the oil in a nonstick wok or saucepan over med-high heat. Add the ginger and cook for 30 seconds to a minute until it turns golden. Add the cumin seeds. They should sizzle upon contact with the hot oil. Add turmeric and optional green chile pepper. Add the grated turnips and the red pepper flakes. Cook for about 3-4 minutes. Add the sugar and cook for another 2 minutes. Transfer to a serving dish and sprinkle garam masala on top. Garnish with the cilantro leaves (optional).
