A great way to use up the stir-fry mix or kale/collard greens in your Eatwell CSA box! 1 bu. stir-fry mix or other greens, rinsed, stemmed, torn or chopped into bite-sized pieces 8 oz. sausage (Kielbasa, Andouille, or Chorizo) cut into slices OR casings removed 1 c. thinly sliced red onion 6 garlic cloves, minced 3 Tbsp. cider vinegar salt and pepper

Heat oil to med-high in a med. pot. Add sausage and cook until browned (if using chorizo, cook until most of the liquid evaporates). Add onion and cook until softened, about 2-5 minutes. Stir in garlic. Add greens and vinegar to pot, stir into sausage and cover for 2-5 minutes. Remove lid and increase heat, stir until liquid evaporates, 3 to 5 minutes. Season with salt and pepper. Ready to plate!
