Bok Choy with Soy-Garlic Sauce
Cut off the green parts from the lighter stems -- you'll be cutting a "V" shape, basically. Chop the lighter stems into ½” pieces, then chop the green leaves coarsely. Heat olive oil over high heat until quite hot and then brown the stems. Add some minced garlic and cook for 30 seconds to toast. Add the leaves and a soy sauce/sugar mixture (about 2 Tbsp. of soy sauce and 1 Tbsp. of sugar). Toss until the leaves are wilted and serve immediately. Submitted by Eatwell CSA member Corrie Haffly
