1 lb fresh Fava beans in the pod, shelled (yields ¾ cup beans)2 Tbsp. extra-virgin olive oil 2 Tbsp. minced prosciutto (or bacon, but use no olive oil if you use bacon) ¼ tsp. sea salt ¾ tsp. minced green garlic ½ tsp. balsamic vinegar 4 large mint leaves, finely chopped (optional)
In a med. skillet, heat olive oil over med. heat. Add the prosciutto (or bacon—if you use bacon, add it to the pan without olive oil) and saute, stirring constantly, until fragrent & beginning to brown. This should take 3-8 mins. Add Fava beans, season with salt & saute for about 5 mins, until beans are tender. Add balsamic & mint. Turn off heat. Stir to coat.
