2 lb Fava beans in the pod1 Tbsp. butter 1 leek or bu. Green garlic, finely chopped 1 Tbsp. flour 1 sprig fresh marjoram, chopped sea salt and freshly ground black pepper 1 Tbsp. cane sugar 1 cup white wine 1/2 c. vegetable stock
Shell the Fava beans (split open pod, pop out beans, and remove from their skins). Put butter in a pan with finely chopped leek/green garlic. Cook for 4 mins. until golden. Stir in flour & cook until you have a thick roux: about 1 min. Add beans & marjoram, salt & pepper, sugar, & white wine. Mix all together. Add the stock, mix, and simmer gently for 20-25 minutes until the beans are tender.
