Sooooo good! 1 lb. spaghetti ½ c. extra virgin olive oil ½ c. freshly squeezed lemon juice ½ c. freshly grated parmesan zest of half a lemon, or to taste salt and pepper, to taste

Cook spaghetti and drain. In a non-reactive bowl, mix all other ingredients with a whisk. Feel free to adjust quantities, depending on your tastes. Combine hot spaghetti with lemon sauce and serve immediately. If you undercook the spaghetti by a few minutes and let it continue to cook while immersed in the sauce, this dish will be even better. Serve as a side for dinner or as a light lunch with a salad.
