1 Tbsp. rice wine or dry sherry (white wine or sake works, too!)1 Tbsp. soy sauce ¾ tsp. sugar ½ tsp. salt 2 Tbsp. vegetable oil 5 med garlic cloves, smashed, or one bunch green garlic, minced 1 pound lettuce, washed, dried, & cut crosswise into 1”-wide pieces 1 tsp. sesame oil

Combine rice wine, soy sauce, sugar & salt in sm. bowl. Heat a wok or frying pan over high heat until a bead of water vaporizes within 1 to 2 secs. of contact. Swirl in vegetable oil, add garlic, & stir-fry 5 secs. Add lettuce & stir-fry 1-2 mins. or until lettuce is just limp. Stir the sauce, swirl it into wok/pan. Stir-fry 30 secs. to 1 min. or until lettuce is just tender & still bright green. Remove from heat & drizzle with sesame oil. Serves 4.
