Prep time: 1 hour, serves 2 ½ large Daikon radish (½ lb., 2 c grated) 2 tsp. toasted sesame oil ½ tsp. fresh ginger root, peeled & grated ¼ tsp. cumin seeds 2½ c. water ½ tsp. sea salt or 1½ tsp. tamari 1 Tbsp. fresh parsley or cilantro, chopped 2 Tbsp. leek, finely chopped (optional)

Wash daikon & grate it. Set aside. Put sesame oil in med. saucepan to warm over low heat. Add ginger, cumin seeds & leek & sauté for 1 min.  Add grated daikon & slowly sauté for 10 mins, stirring occasionally. Add water & cover; cook on med. heat for 30 to 45 mins or until daikon is very tender. Add salt or tamari & parsley/cilantro. Serve hot.
