1½ lb. tatsoi; washed & driedsalt, to taste 1/3 c . soy sauce 2 Tbsp. sesame oil 1 Tbsp. ginger; minced 2 Tbsp. sugar ¼ c. white vinegar 4 dashes Tabasco sauce black pepper, to taste ¼ c. sesame seeds, toasted

Bring a large pot of salted water to a rolling boil. Add the tat soi & blanch for one minute. Drain greens & immediately plunge into ice water to stop the cooking process. Drain again. In a sm. bowl, combine soy sauce, sesame oil, ginger, sugar, vinegar & Tabasco. Mix well, & season to taste with salt & pepper. In a lg. bowl, combine tat soi & dressing, & mix well. Refrigerate until well chilled, garnish with sesame seeds & serve.
