Turnips Braised with Soy Sauce and Sugar

Chef Madhur Jaffrey recommends serving these with rice, beans, and dark greens 1 bunch turnips, trimmed and halved 1/2 cup vegetable stock 1-1/2 tsp sugar 1 Tbsp. peanut or canola oil 1 Tbsp. tamari soy sauce 1/4 tsp roasted sesame oil

Put the oil in a lg. frying pan and set over med-high heat. When hot, add turnips. Sauté until turnips are lightly browned on all sides, about 5 min. Add the stock, soy sauce, and sugar. Bring to a boil. Cover, turn heat down to low, and simmer gently for 15 min., or until turnips are tender. Turn every now and then so the turnips color evenly. Sprinkle the sesame oil over the top and toss. These turnips may be made ahead of time and reheated. Serves 2 to 4.
