Butternut squash
Good oil (sesame is great)
1/2 cup  of flour (or a little less)
Cut squash in half, place the pieces on a baking sheet with flesh side down/skin up. Bake it until soft in 400F oven (about 45 minutes to 1 hour). Allow to cool. Remove skin and mash the flesh. Gradually add flour, mixing well after each addition. The mixture should hold together well but not be too dry. Pour some oil into a pan over medium heat. Drop the squash-flour mix with a spoon and make a burger shape. Pan-fry it as you do with your burgers until the sides are cooked.
