For those of you who do want to enjoy your stuffing with a turkey,  allow ¾ c stuffing for each pound of bird.
¾ c chopped leeks
2-3 Tbsp. chopped fresh herbs
1 ½ c chopped celery
3 c chopped apples
1 c butter or margarine
2 c walnuts
7 c soft bread cubes

2 tsp. salt
In a large skillet, cook and stir leeks, apples, celery, walnuts and raisins in butter. Stir in 1/3 of the bread cubes. Turn into deep bowl. Add remaining ingredients and toss. Bake at 350 degrees for 30 minutes.
