Each year as the first flowers of the lavender open our friend Matt Beekman brings 12 hives to capture the lavender honey. There are four commercial hives on each pallet. They arrive around midnight as they must be moved after they go to bed at night. They woke up the next morning and immediately went to work on the lavender gathering nectar to make some of the finest floral honey. We sell the honey for $12 for a 6 oz jar.
