2 lb Fava beans in the pod sea salt and freshly ground black pepper
1 Tbsp. butter 1 Tbsp. cane sugar
1 leek, finely chopped 1 cup white wine
1 Tbsp. flour 1/2 c. homemade vegetable stock
1 sprig fresh marjoram, chopped
Shell the Fava beans (split open pod, pop out beans, and remove from their skins). Put the butter in a pan with the finely chopped leek, and cook for 4 minutes until golden. Stir in the flour, and cook until you have a thick roux: about 1 minute. Add the beans and the marjoram, salt and pepper, sugar, and white wine, and mix all together. Add the stock, mix, and simmer gently for 20-25 minutes until the beans are tender.
