Mashed Winter Squash

Halve squash lengthwise & remove seeds. Coat cut side with olive oil, then place it down on a roasting sheet. Bake at 350 for 40 mins or until a fork slides in easily. Let cool a bit, then scoop out flesh & mash. Try whipping in a little milk or stock, if you have it. Could be served with a pat of herb butter melting on top. Sage works particularly well.
