Wheat

We are now growing and milling our own flour and it is available to members for delivery with their CSA box and at the Ferry Plaza Farmer’s Market in San Francisco on Saturdays from 8-2.

Varieties:

Expresso:  2010 Hard Red Winter Wheat – outstanding bread flour with 13% protein;  Click here for a great bread recipe!

Blanco Fuerte:  2010 Hard White Spring Wheat- wonderful bread flour with a slightly crunchy texture and 11% protein

Sonora:  2010 Soft White Winter Wheat – one of the oldest Heirloom varieties in North America with 15% protein.  Especially great for soft breads, pastry, or pie crust

Bolero:  2010 Soft White Wheat- extremely rare Italian Heirloom variety used for bread and pasta with protein levels up to 13% and low in gluten

Ghaba Di Farro and Rosa Gentile:  2010 Tuscan spelt mixed with a rare soft red wheat with 14% protein levels, makes a great pizza dough

Frassinetto:  2010 Rare Italian Heirloom Variety- makes amazing bread and pasta with protein levels up to 13%
