4 tablespoons canola oil or ghee
1 large onion, finely chopped
1 bag tatsoi, washed and roughly chopped
A pinch of red pepper flakes
1 teaspoon peeled and finely grated fresh ginger
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 cup water
1/4 teaspoon garam masala
Warm the oil in the large pan over medium-high heat. Add the onions and stir for 3 minutes. Add the tatsoi, red pepper flakes, ginger, salt, and sugar, stirring and cooking for 5 minutes.
Add the water and bring to a simmer. Cover tightly and and turn heat down to low, cooking for 10 more minutes. Remove the lid and boil away some of the extra liquid. Sprinkle garam masala over the top and stir.
