These are the crops on the farm, at least in the vegetable section, that take the longest to mature. Garlic is planted in October and harvested in June. Leeks are a little more complicated in the fact that we make three plantings: July, August and September. The ones in the greenhouse now will be ready for Thanksgiving. Leeks planted in August are harvested after the new year, and September leeks come to fruition in March or April. Each year we plant the same variety, and the time to harvest is dictated by when we plant.
