Arugula leaves, any thick stems removed good extra-virgin olive oil splash of fresh-squeezed lemon juice salt and freshly-ground pepper, to taste toasted pine nuts shaved Pecorino cheese

Toss arugula with olive oil, a splash of lemon juice, and salt and pepper. Sprinkle with pine nuts and Pecorino cheese.
