Grated Turnip and Apple Salad

(Nauris-Omenasalaatti in Finnish)
Simple and refreshing, sharp and sweet, this salad is very quickly prepared, especially if you use a food processor. Use as a smorgasbord item or for a pleasing contrast to a rich main dish such as Cauliflower Gratin.
1 cup peeled and grated raw turnips or rutabagas (about 2 medium turnips or ¼ rutabaga)
1 cup peeled and grated tart green apples
½ cup chopped fresh parsley
Juice of one lemon
1 tablespoon vegetable oil
salt and freshly ground black pepper, to taste
Combine everything, toss, and chill.
